Bacon-Wrapped Stuffed Cod with Cranberry Port Sauce
Thick cod fillets stuffed with sausage, sage and cranberries, wrapped in bacon and baked in 25 minutes. Serve with a ruby cranberry port sauce for Christmas.
Thick cod fillets get a sausage, sage and cranberry stuffing, then a bacon wrap that keeps the fish moist in the oven. A quick cranberry and port sauce adds a tart, ruby finish that fits a Christmas table.
Tips for Success
- Buy center-cut fillets at least 1 1/2 inches thick so a pocket can be cut.
- Cool the onion before mixing, so the egg does not start to cook.
- Whisk the butter into the sauce off the heat so it does not split.
- Do not wrap too tightly. Gaps let the bacon crisp.
Make-Ahead and Storage
Stuff and wrap the fish up to 8 hours ahead and keep it covered in the fridge. The sauce can be made a day ahead and gently rewarmed. Leftover fish keeps 2 days in the fridge.
Variations
- Use turkey sausage for a leaner stuffing.
- Replace the port with orange juice for a sauce without alcohol.
- Use prosciutto instead of bacon.

Ingredients
Instructions
- Heat the oven to 400°F. Line a rimmed baking sheet with parchment paper.
- Melt 1 tbsp butter in a small skillet over medium heat. Cook the onion and garlic for 5 minutes until soft, then spread on a plate to cool for 10 minutes.
- In a bowl, mix the cooled onion with the sausage meat, egg, lemon zest, sage, dried cranberries, pine nuts, breadcrumbs, 1/4 tsp salt and 1/4 tsp pepper. Mix gently with your hands until combined.
- Pat the cod dry. With a sharp knife, cut a deep horizontal pocket into the side of each fillet, without cutting all the way through.
- Fill each pocket with about a quarter of the stuffing and press the opening closed. Season the outside of the fish lightly with salt and pepper.
- Wrap 2 slices of bacon around each fillet, overlapping them slightly. Tuck the ends underneath so they stay in place.
- Set the fillets seam-side down on the baking sheet and brush with the olive oil.
- Bake for 22 to 28 minutes, until the bacon is browned and an instant-read thermometer in the thickest part reads 145°F. The sausage stuffing must also be cooked through.
- While the fish bakes, make the sauce. Simmer the red wine, port, vinegar, shallots and sugar in a small saucepan over medium heat for 8 to 10 minutes, until it looks syrupy and is reduced to about 1/3 cup.
- Add the fresh cranberries and simmer for 2 minutes, until a few begin to pop. Take the pan off the heat.
- Whisk in the cold butter a few cubes at a time until the sauce is glossy. Taste, and add salt and pepper.
- Rest the fish for 5 minutes, then serve with the warm sauce spooned over.
Frequently Asked Questions
What temperature is cod done?
Cod is cooked at 145°F. The flesh turns opaque and flakes easily with a fork. Because this cod is stuffed with sausage, check the stuffing too.
Can I use frozen cod fillets?
Yes. Thaw them fully in the fridge overnight and pat very dry before stuffing, otherwise the extra water makes the bacon soggy.
What fish works best for stuffing?
Choose thick, firm fillets such as cod, halibut or haddock. Thin fillets are hard to cut into pockets.
