Cherry Orange Iced Tea Mocktail for a Crowd

This cherry orange iced tea is fruity, lightly tart and pretty in the glass. It is a cheerful alcohol-free drink that works for kids, drivers and anyone skipping cocktails.

Tips for Success

  • Let the tea cool before chilling. Hot tea in the fridge can turn cloudy.
  • Steep the tea for no more than 5 minutes, or it turns bitter.
  • Cool the cherry syrup fully before you stir it in, so the ice does not melt right away.
  • Taste before you serve. Cherries vary a lot in sweetness.

Make-Ahead and Storage

Make the tea and the cherry syrup up to 2 days ahead and keep them in separate covered containers in the fridge. Stir them together just before the party and pour over ice. Leftover mixed tea keeps for 1 day.

Variations

  • Add 1 oz of white rum or bourbon per glass for an adults-only version.
  • Swap the black tea for hibiscus tea for a bold ruby color.
  • Top each glass with a splash of sparkling water for fizz.

Instructions

  1. Use a vegetable peeler to remove the peel from 1 orange in long strips. Put the strips in a heatproof pitcher.
  2. Add the tea bags, 1 tbsp of the sugar and the just-boiled water. Let it steep for 5 minutes.
  3. Remove the tea bags, stir in the cold water and let the tea cool to room temperature.
  4. Cover the pitcher and chill in the fridge for at least 1 hour.
  5. Squeeze the juice from the peeled orange. Put the cherries, the juice and the remaining 1 tbsp sugar in a medium saucepan over medium heat.
  6. Simmer for 10 minutes, stirring now and then, until the cherries are soft and the liquid looks syrupy.
  7. Remove from the heat. Mash the cherries with a potato masher or fork.
  8. Press the mixture through a coarse sieve into a bowl, using the back of a spoon. Throw away the pulp left in the sieve.
  9. Let the cherry syrup cool completely, about 20 minutes.
  10. Stir the cherry syrup and vinegar into the chilled tea. Taste, and add honey if you want it sweeter.
  11. Slice the second orange. Fill 6 tall glasses with ice and a few orange slices, then pour in the iced tea.

Frequently Asked Questions

Is this cherry iced tea mocktail kid-friendly?

Yes. It has no alcohol. It does contain a little caffeine from the black tea, so use decaf tea bags for young children.

Why is there vinegar in the recipe?

A small amount adds a gentle tang that balances the sweet cherries, much like lemon juice does. You will not taste it as vinegar.

Can I use frozen cherries?

Yes. Use them straight from the freezer and add 2 to 3 minutes to the simmering time.
